Ci sono ancora le ciliegie in giro, vero?
Come tutti gli anni, anche questo, nel periodo delle ciliegie, in casa siamo sommersi.
Mi piacciono così tanto che quando inizio non riesco mai a smettere. Mi piacciono calde, appena colte dall'albero in una giornata di sole (quando posso), ma mi piace anche il loro sciroppo, la marmellata e le torte di ciliegie!
Quest'anno, ho provato a seguire la ricetta che mi ha regalato un'amica, nata da mamma americana, e presa dalla bibbia delle ricette americane di casa sua.
Un libro semplice, in cui le ricette sono semplici, ma di una semplicità che poi esplode in torte piacevolissime.
C'è tutta una serie di torte stile nonna Papera (avete presente?) come questa.
Qui il croccante della crosta contrasta con la morbidezza del ripieno e del suo sughino…una goduria.
Ma per apprezzarla al meglio, secondo me, bisogna resistere ed aspettare che si freddi (per non correre il rischio di ustionarsi e per permettere che il succo delle ciliegie si addensi un po').

Cherry pie (stile torta di mele di nonna papera)

Per la pasta brisè
2 tazze di farina 00
1 cucchiaino di sale
2 cucchiaini di zucchero
65 g burro
25 g strutto
6-7 cucchiai di acqua

Setaccia la farina con lo zucchero ed il sale.
Taglia il burro a cubetti e, con la punte delle dita, impolveralo di farina. Aggiungi anche lo strutto (freddo di frigo) e mescola con la farina fino ad ottenere delle briciole.
Unisci l'acqua un po' per volta, in modo da farla assorbire ed ottenere un panetto liscio. Potresti aver bisogno di un po' di acqua in più.
Avvolgi nella pellicola (senza pvc) e tieni in frigo.

Per il ripieno
4 tazze di ciliegie (circa 400 gr)
3 cucchiai di farina
1 1/3 tazze di zucchero
2 cucchiai di burro

Lava le ciliegie, togli il nocciolo e mescolale con lo zucchero e la farina. Lascia riposare per 15 minuti.
Togli l'impasto dal frigo e dividilo in due parti, di cui una più grande.
Con un matterello, forma la base della torta, tirando la pasta fino ad essere circa 5 cm più larga della tortiera (in modo da poter formare il guscio della sfoglia) ed alta mezzo centimetro.
Appoggia la base sulla tortiera e versaci la frutta. Coprila qua e là con qualche fiocco di burro.
Ricopri la torts con l'impasto rimanente, come fosse un coperchio e bucherellalo bene, in modo da far uscire il vapore che la frutta rilascerà (considera che in cottura i buchi si restringono). In alternative, puoi provare a coprire con un reticolo, come se fosse una crostata.
Cuoci 10 minuti a 230°C poi riduci a 180°C e continua la cottura per altri 40 minuti o finché la torta avrà un bel colore dorato.

It's cherry time. This year, as every year, I am submerged by cherries. I like cherries and I like them so much that I can't stop eating them, when I start.
I like them warm and raw, as they are when I am able to pick them from the tree in a sunny day, but I like also their syrup, the jam, and the pie.
This recipe was a gift from a friend of mine, born from an american mum, taken from her bible of american cooking. A simple book, where recipes are simple, and simplicity comes out in utterly pies.
I especially liked this cherry pie for the crusty shell which opposes with the soft filling and the juices. For its very best, you should wait until it has cooled, before tasting it: you'd avoid burning your tongue and let the juices become thicker.

make a 9 inch pie

for the pie dough
2 cups all purpose flour
1 tsp salt
2 tsp sugar
65 g butter
25 g lard
6-7 tbs water
Sift together flour, salt and sugar. Cut the butter in little dice, mix it with your fingertips to the powder mixture, together with the lard until it gets the grain of peas. Sprinkle the dough with water and knead a little so to have a smooth ball. You may need to add more water.
Wrap in cling film (pvc free) and set aside in the fridge to cool.


for the filling
4 cups fresh cherries
3 tbsp flour
1 1/3 cups sugar
2 tbsp butter

Wash the cherries, pit them and combine with sugar and flour. Let the mixture stand for about 15 minutes.
Cut the dough in two parts, one bigger than the other one. Roll the bigger dough in a circle about 2 inches wider than the pie pan diameter. The dough should be 1/5 inch thick.
Lay the dough in the pan, pour the fruit into the pie shell, dot with butter. Cover the pie with a well pricked top (by using the remaining rolled dough) or with a lattice. Bake ten minutes at 450F/230C, then reduce to 350F/180C and bake about 40 minutes or until golden brown.
