Questa volta la ricetta è per me.
Ovvio, se volete provarla, ne sarò felice, ma la ricetta è per me.
La scrivo qui perché son sicura che altrimenti impazzirei a ritrovare i vari pezzetti scritti in qua e in là e ricomporre il tutto, per ottenere lo stesso risultato.
Il Profiterol, confidenzialmente chiamato BONGO, piace a tutti qui in casa.
E la soddisfazione di realizzare tutto, ma proprio tutto, partendo da farina, burro, uova, zucchero, panna e cioccolato è enorme.
Ma ancora più enorme è la gioia di vederlo finire (prima ancora di averlo immortalato a modo) e di sentirti dire che è venuto fantastico.
L'ho portato ad un ritrovo di parenti/amici per Santo Stefano.
Non sono riuscita a fare foto decenti a casa perché è stato montato all'ultimo momento, proprio prima di uscire, e non sono riuscita a fare foto decenti (ma solo con il cellulare) nemmeno quando l'ho messo in tavola, perché l'assalto delle cavallette è stato immediato e fulmineo.

Per realizzarlo, ho fatto un collage di ricette.
Dopo aver studiato Bressanini e la sua Scienza della Pasticceria, ho preparato dei bignè più leggeri del solito, usando meno uova e più albumi.
Per la crema, ho seguito il signor Luca Montersino e le indicazioni riportate in Peccati di gola.
Per la cioccolata di copertura mi sono affidata ad una ricetta che mi aveva dato lo zioPiero.
Capite bene che riuscire a ritrovare le dosi giuste per ripetere l'opera non sarebbe stato facile senza un appunto serio.
Come il seguente. :-)

Ne ap-profiterol

Ecco qui l'unione del tutto:

Profiterol (10 persone)

per i bignè
160 g di farina manitoba (W330)
250 g di acqua
100 g di burro
3 uova
55 g di albume
3 g di sale
5 g di zucchero

In una pentolino, portare ad ebollizione acqua, burro, sale e zucchero.
Setacciare la farina.
Non appena l'acqua comincia a bollire, rovesciare in una volta sola tutta la farina e mescolare con un mestolo di legno in modo che la farina venga inumidita e poi asciugata. Quando forma una palla e si stacca dai bordi è pronta (ci vorranno 3-5 minuti).
Rovesciare nella planetaria e avviare con il gancio a foglia in modo da farla raffreddare (sotto i 60 gradi).
In un ciotolino sbattere con la forchetta le uova e l'albume ed aggiungerli alla massa in tre volte, aspettando che sia stato assorbito bene, prima di procedere.
Alla fine avrai una pasta piuttosto elastica e con l'aspetto di una crema pasticcera, che 'scrive'.
Rivestire una teglia con carta forno, attacandola alla teglia con un goccio di impasto, in modo che non scivoli mentre si formano i bignè.
Mettere l'impasto in un sac-a-poche con il beccuccio tondo da 1 cm di diametro e formare bignè di circa 2 cm di diametro, piuttosto distanziati. Con il dietro di un cucchiaino bagnato, abbassare la punta che si sarà formata.
Cuocere in forno caldo a 220° per circa 15 minuti, poi abbassare la temperatura a 180° fino a che non sono belli dorati (per altri 10 minuti circa). Far freddare su una griglia.


per la crema chantilly
200 ml di latte
50 ml di panna
5 tuorli
75 g di zucchero
17 g di amido di mais
1 cucchiaino di estratto di vaniglia
320 g di panna (da montare)

Montare i tuorli con lo zucchero fino a renderli spumosi.
Aggiungere l'amido di mais setacciato, un po' per volta, incorporandolo dal basso verso l'alto, in modo da non smontare la massa.
Nel frattempo portare ad ebollizione il latte con la panna e l'estratto di vaniglia. Rovesciare la massa di tuorli e zucchero sul latte, e aspettare che ritorni il bollore ed il latte riaffiori dai lati del pentolino.
A quel punto, girare vigorosamente con una frusta il tutto e spengere il fuoco.
Se la crema dovesse essere troppo densa, aggiungere un po' di latte.
Lasciare raffreddare, immergendo il pentolino in una ciotola con acqua e ghiaccio e mescolando. Coprire con pellicola a contatto per evitare che si formi la crosticina.
Una volta fredda, aggiungere alla crema la panna montata, sempre con movimenti dal basso verso l'alto.

per la copertura di cioccolato
500 ml di latte
50 g di cacao
120 g di cioccolato fondente (per me 100 fondente e 20 al latte)
100g di zucchero
30 g di fecola di patate

Riscaldare il latte.
Tagliare il cioccolato a tocchetti.
In un pentolino setacciare il cacao e la fecola di patate. Aggiungere lo zucchero e versare il latte un po' alla volta a filo, mescolando continuamente, in modo da non formare grumi.
Aggiungere il cioccolato e ricordarsi di mescolare ogni tanto all'inizio, poi quasi continuamente quando la crema comincia ad addensarsi.
Spengere quando la crema ha la consistenza di una cioccolata calda. Ci vorrà circa una decina di minuti.
Lasciare raffreddare con pellicola a contatto per non formare la crosticina.

Assemblaggio:
Riempi un sac-a-poche con beccuccio piccolo di crema chantilly, riempi ogni bignè dalla parte inferiore fino a che la crema non comincia a fuoriuscire, metti da parte.
Immergi un bignè alla volta nella cioccolata, fallo un po' scolare aiutandoti con due cucchiai, poi componi il profiterole sul vassoio di portata, cominciando dal centro e formando un primo strato e poi via via gli altri fino a formare una piramide.

I made this wonderful cake for the day after Christmas.
I couldn't take proper pics as I assembled it just before going out to the party and even when I showed it on the table, people promptly rushed on the puffs so that I only could take pics of the leftovers.. before they disappeared at all.
We enjoyed it so much that I have no excuse: here is the place where I have to write it down, for future memory.
And here is the final recipe, inspired and combined from a lot of different sources.

Profiterol (serve 10 people)

For the choux pastry:
160 g strong flour
250 g water
100 g butter
3 eggs
55 g egg white
3 g salt
5 g sugar

In a saucepan bring water, butter, salt and sugar to boil.
Sift flour.
As soon as water starts to boil, pour all the flour at once. Stir with a wooden spoon until flour has absorbed all the water and get dried. The batter is ready when it takes a ball shape and it detaches from the pan (you may need 3-5 minutes).
Put in an electric mixer with paddle attachment on and let it go until the batter goes down 60°C.
Whisk the eggs and the white together and add them to the batter in three times. Insert the next batch when the previous has been absorbed.
You're going to have a quite elastic batter, that looks like a cream.
Glue parchment paper to a baking sheet with a drop of batter in each corner. Put the batter in a piping bag fitted with a smooth tip and pipe 2 diameter balls. Gently rub the tip of each choux with the back of a wet teaspoon.
Preheat oven to 220°C and bake for about 15 minutes, reduce to 180°C and leave in the oven until they get golden brown (10 more minutes). Let them cool on a wire rack.


for the chantilly cream:
200 ml milk
50 ml double cream
5 yolks
75 g sugar
17 g corn starch
1 tap vacilla extract
320 ml double cream

Whisk together yolks and sugar until they get pale and fluffy. Add sifted corn starch little by little, with upside-down movements.
In a saucepan bring milk and cream to boil. Add the vanilla extract. Pour in the eggs mixture and wait until the milk get boiling again and emerges from the side of the pan. Remove from the heat and vigorously stir with a whisk.
Should the cream be too thick, add some milk.
Put the pan in a big bowl filled with water and ice cubes and stir the cream, to get it cool down.
Cover the surface with cling film. Wen the cream is cold, add the whipped double cream, with upside-down movements.

for the chocolate ganache:
500 ml milk
50 g cocoa
120 g bitter chocolate (or 100 g bitter chocolate plus 20 g milk chocolate)
100 g sugar
30 g potato starch

Warm the milk.
Roughly chop chocolate.
In a saucepan sift cocoa and potato starch. Add sugar and pour in the milk little by little, mixing continuously with a spoon, to avoid clumps.
Add the chocolate chunks and mix the batter a bit, but increasing the frequency as the mixture gets warm and becomes thicker.
Swicth off the heat when the mixture has the consistency of hot chocolate. You may need ten minutes. Let it cool covered with cling film, to avoid the crust.

For the setting up:
Take a piping bag fitted with a little tip and fill it with chantilly cream. Fill each puff from the bottom and set aside.
Plunge each puff in the chocolate ganache, and drain it a bit.
Then assemble the profiterole pyramid starting from the centre of the tray and create the layers, reducing the number of puffs for each layer as the cake grows up.
