Anzi, BUONDI'.
Non sono impazzita, sono solo simpatica. :-D
Insomma, avete presente le merendine di una volta?
Quelle che, in fin dei conti, ci sono anche ora e ti fanno sentire un po' meno vecchia, a meno che non ti vengano a dire con fare innocente "Mamma, ma c'erano anche ai tuoi tempi? Allora è tanto che esistono, eh?"
Quelle merendine che hai mangiato da piccola ma che, ora, storci il naso a dare ai tuoi pargoli al solo pensiero di quali grassi idrogenati, emulsionanti, Exxx e co. sono annoverati tra gli ingredienti...
Quelle merendine che però fanno parte un po' anche di te.
E allora, se scopri che su faccialibro c'è un gruppo di matte/i come te che hanno pensato di organizzare un sabato panificatore per riprodurre proprio quelle merendine, usando ingredienti un tantino migliori e pure la pasta madre, te che fai?
Beh, io, tanto per cominciare, l'ho scoperto la domenica sera. A cose fatte.
Però ho rimediato, eh!
Il sabato successivo, anche se in solitaria, il giorno panificatore me lo sono fatto da sola, attingendo ai loro consigli, foto e entusiasmo.
Questo quello che è venuto fuori.

il Buondì


(Ricetta tratta dal gruppo Facebook di Paoletta di Anice e Cannella), le mie note in corsivo.

BUONDI'  a lievitazione naturale (circa 22)

150 g di lievito madre maturo*
500 g di farina W330 (oppure metà 00 e metà manitoba)
60 g di burro
2 tuorli
1 uovo (usare uova grandi)
24 g olio semi
12 g di sale
100 g di zucchero
100 g acqua (per le farine che ho usato ho dovuto aggiungerne poco meno di metà tazzina da caffè)
100 g latte
3 cucchiaini di estratto di vaniglia

*procedere col rinfresco del lievito madre la sera precedente e lasciare a T.A. tutta la notte. Al mattino procedere con un secondo rinfresco, portare a maturazione (circa 3 ore) e iniziare spezzando direttamente il lievito nei liquidi con 1 cucchiaio dello zucchero previsto.

A questo punto aggiungere 1/5 dello zucchero (1 cucchiaio circa) e tanta farina quanto basta perchè l'impasto riprenda consistenza e si aggrappi alla foglia.
Procedere aggiungendo l'albume, 1/5 dello zucchero e farina qb (con l'albume saranno orientativamente 3 o 4 cucchiai) affinchè l'impasto si aggrappi alla foglia.
Continuare inserendo 1 tuorlo, 1/5 di zucchero e farina qb per riportare l'impasto in corda. Durante la lavorazione ribaltare l'impasto di tanto in tanto.
Quindi inserire con la stessa modalità il secondo tuorlo, 1/5 di zucchero e farina. Riportare in corda l'impasto. Con l'ultimo tuorlo (il terzo) inserire il sale e lo zucchero rimanente e non appena l'impasto si aggrappa alla foglia mettere metà della farina rimanente avendo cura di abbassare la velocità. Ribaltare l'impasto a metà lavorazione. Aggiungere la farina rimanente.
Valutiamo la consistenza dell'impasto che può variare secondo il tipo di farina utilizzata (Se si ha un impasto troppo consistente, come quello che è venuto a me,  aggiungere fino a 15 g di acqua in più). Nel frattempo avremo spatolato il burro e procederemo all'inserimento graduale. Quando tutto il burro sarà stato assorbito, inseriremo l'olio a filo. Ribaltare l'impasto. Inserire la vaniglia a gocce.
Finito l'impasto siamo ad un bivio:
1) aspettare i primi accenni di lievitazione (almeno 40 minuti) e riporre in frigo nella parte più fredda per riprendere poi la lavorazione. In questo caso togliamo dal frigo l'indomani e aspettiamo la lievitazione per poi proseguire normalmente.
2) finirli in giornata e allora procedere alla puntata di 1 ora.


La glassa mandorle e nocciole


Preparare intanto la GLASSA con
- 48 g di farina di mandorle
-16 g di farina di nocciole
- 110 g di zucchero
- 50 g di albumi  (l'albume varia in relazione all'assorbimento delle farine, comunque la consistenza deve essere densa).
-12 g di fecola di patate
-1 o 2 gocce di estratto di mandorla amara (io ho tritato due mandorle amare insieme alle altre)
Sarebbe preferibile prepararla prima e lasciarla in frigo ma se non abbiamo avuto modo di farlo possiamo rimediare preparandola durante la puntata e riponendo in freezer per 40 minuti. Quindi trasferirla in frigo.

-Trascorso questo tempo schiacciamo leggermente dando forma quadrata e facciamo un giro completo di pieghe a 3. Arrotondiamo leggermente e copriamo a campana per 30 minuti. Tagliare nella pezzatura desiderata (noi 50 grammi per un totale di 22 pezzi),e avvolgere a palla stretto sigillando sotto.
Il tempo che saranno tutti così preformati potremo ricominciare dal primo pezzo con la formatura definitiva:capovolgere la pallina ed avvolgere a filoncino avendo cura di sigillare bene sotto. Riporre a lievitare in una teglia rettangolare precedentemente foderata con abbondante carta forno sistemata in modo che formi come delle onde dentro le quali sistemeremo i pezzi che rimarranno così separati. Non avvicinateli eccessivamente: le pareti a contatto cuociono male!!!
Lasciar lievitare (a me ci sono volute circa quattro ore) coperti con pellicola.
Scaldare il forno a 180°
Montare con le fruste la glassa ed applicare con sac à poche e bocchetta piatta, facendo delle righe sulla sommità (poi tenderanno a colare e a spandersi in modo più regolare).Quindi glassare e cospargere con granella di zucchero.
Infornare a 180° in forno statico o termoventilato (io termoventilato perchè ho cotto due teglie insieme) per 20 minuti circa.
Appena sfornati pennellare con latte.


Questa è la scaletta che ho seguito, in base ai miei impegni:
- giovedì sera ho rinfrescato la pasta madre, venerdì mattina di nuovo
- venerdì sera ho impastato e ho messo in frigo fino alle 12 del sabato
- sabato pomeriggio ho formato e la sera dopo cena ho infornato.

I buondì sono venuti bene.
I legumini ne sono rimasti entusiasti (e anche un paio di colleghi).
Secondo me, che sono pignola, non sono ancora abbastanza nuvolosi... ma forse per farli esattamente come quelli confezionati bisognerebbe metterci dentro grassi idrogenati, emulsionanti, Exxx e co.
E allora molto meglio questi!!

Nocciole

BUONDI'  buns made with sourdough (makes 22)

150 g sourdough*
500 g  strong flour
60 g butter
2 yolks
1 big egg
24 g peanut oil
12 g salt
100 g sugar
100 g water (add more if  flour needs more)
100 g milk
3 teaspoons vanilla extract

*Refresh sourdough the evening before. Leave at room temperature for the night.
Refresh it again the morning after.

Buondì in lievitazione


When the dough has tripled in size  (in about three hours) start breaking the dough in a  bowl and mix with water, milk and a tablespoon of sugar.

Then add about a tablespoon of sugar and the flour you need to get a solid but soft dough that wraps around the paddle attachment of the stand mixer.
Go on adding the egg white, 1/5 of the sugar and again the flour you need to to get a solid but soft dough (this time should be about 3 or 4 tablespoons).
Then add 1 yolk, 1/5 of the sugar and again the flour you need to to get a solid but soft dough. Remember to stop the mixer once a while and to move the dough upside down, using a spatula, for better kneading.
Follow the same steps to add the second yolk, 1/5 of the sugar and again the flour.
With the last yolk (the third one) add salt, the remaining sugar and half of the remaining flour. Slow down the robot speed, turn the dough upside down and add the last flour.
Now check your dough: if it's too hard (as mine was) you may add up to 15 ml of water. It depends on the flour you used.
Then add softened butter in three times, in little bits, and wait it has been absorbed before adding more.
At last pour in the oil. Overturn the dough then add vanilla extract in drops.
When the dough is ready you can choose to:
1)Bake tomorrow: then wait for the dough to start leavening (at least 40 minutes), then set in the fridge until the day after. Then you have to take the dough out of the fridge and wait for rising, before going on with the directions.
2) Bake the same day: then let the dough rest for one hour.


Buondì mark


Meanwhile prepare the frosting using:
- 48 g almond flour
-16 g hazelnuts flour
- 110 g sugar
- 50 g egg whites  (the exact weight depends on the humidity of th flours used, anyway the frosting should be quite thick).
-12 g potato starch
-1 o 2 drops of bitter almond extract (I chopped 2 bitter almonds together with the other nuts to get the flour)
Mix all together and set aside in the fridge.

- When the dough is ready, press a bit to a squared shape and fold in three, rotate the dough clockwise for a quarter and fold again in three (as shown in the second pic here).
Shape the dough in a ball, cover with a bowl. Half an hour later cut in pieces (50 grams each to get 22 buns) and form a ball, sealing underneath.
Then starting from the first bun formed, shape in rolls and let them rise on a baking tray, covered with parchment paper. The paper should be placed to separate the buns, leaving enough room for rising, as shown in the image above.

Cover with cling film and wait for the buns to double in size (about 4 hours).
Preheat oven at 360F.
Mix the frosting with a whisk, then fill a piping bag with a flat tip and draw lines on the surface of the buns (the frosting will spread evenly by itself). Sprinkle with sugar granes.
Bake for about 20 minutes.
When out of the oven, brush buns with some milk.
